Hi I have acouple forums set up using simplemachines.org and is there a smiple way to lead out all the spam? Also is there a way to set it up so people have to post a number of post beofre they can use the Signature?

IMO, There is no exact solution for decreasing spam on a forum.

It is important to identify what spam is. Is spam just someone signing up with a link in their profile and never coming back? Is spam someone that signs up and includes a url in a post and spamming the forum that way? Is spam someone that is posting with a signature just for the back links?

If you don't have issues IN your forum with spam, don't worry about it. If people are posting things that contribute, then great! Keep them there and let them have their siggys. A lot of us do manual work in SEO, and we pick some forums to post at that will be beneficial to us as well as everyone else.

You can stand away spammers from your forum by doing highly moderation. Forum moderator can give an approval after checking post.
